The Sujihiki knife (sushi and fish)

Ideal for cutting sashimi and sushi, the sushi knife is a Japanese slicing knife. It has a long, strong blade to slide the knife over the fish without forcing. It allows you to make slices of sashimi, cut sushi, fillet fish but also make thin slices of meat. The blade is asymmetrical to allow a clean cut without altering the flesh of the fish. Traditionally, this knife is sharpened on one side only and has another slightly hollow part. This particularity means that only right-handed people are able to use them.

The Deba knife

This knife is a slicing knife used to cut shellfish and fillet fish. This kitchen tool has been made with a thicker blade than a simple slicing blade.
